This Pecorino exudes a saline/mineral character and aromatic profile of of tropical fruit with unripened sour melon (one reviewer described it as peaty/iodine, which might also make sense) and lime rind. The palate delivers a similar profile. Stainless fermented, organic, good balance, hint of bitterness...great buy.
