This is wonderfully complex, balanced, and flavourful chardonnay from Chile's cool-climate Casablanca Valley. The texture and balance is largely achieved through the use of wild yeast, partial (50%) malolactic fermentation, and 10 months' ageing in second and third-fill French oak. The aromas show hazelnut, cream, red apple and pear, lemon curd, grapefruit, pineapple, and touches of honeysuckle, chalky minerals, yeast/biscuit, and light toast/smoke. The flavours are very similar, though the fruit takes center-stage and is particularly bright and intense. Hints of clove and honey also emerge. The acidity, body, and alcohol are all medium high, and the long finish lingers with apple/pear, hazelnut, and toasty/biscuit notes. This would pair beautifully with roast turkey or pork.
