Beautiful flavours and starting to show some mushroom notes
Hinterland is fast becoming well respected as a sparkling specialist. This County winery offers a range of sparklers including traditional and tank methods. Their Ancestral (primary fermentation completed in bottle to capture the CO2) is a fruity, medium sweet cream soda like bubbly with refreshing and somewhat persistent bubbles and medium plus acidity to frame the fruit. Very good length of flavour. An enjoyable fun sparkler that will please a crowd. Was perfect for Canada Day - red colour and all. July 2016.
