There’s a creamier feel to this wine, as well as rich honeyed, bready notes on the nose, all of which stem from its wild fermentation process, which uses natural vineyard yeasts instead of cultured ones. Very ripe peach and pineapple as well, with crème brûlée from new oak barrels. Mid-weight, quite firm and powerful, with a tart lemon cake finish. Very good length. Serving Suggestion Perfect with strong cheeses, seafood & shellfish, poultry, pork and pasta. Discontinued at LCBOCritic Reviews (1)
